CAN I MAKE A PORK SHOULDER IN THE OVEN?

Yes, you can. Follow the instructions on this page for Simple Smoked Pork Shoulder. Marinate the meat as directed. Instead of preparing a smoker, preheat the oven to 300°F. When the oven is ready, discard the marinade, then pat the meat dry with paper towels or a clean kitchen towel. Apply the rub all over the meat. Place the roast in an aluminum baking pan fat side down. Place the pan in the oven and roast uncovered for 4 to 4½ hours, until the pork reaches an internal temperature of 195°F. Remove the pork from the oven, cover with aluminum foil, and let it rest for at least 30 minutes and up to 1 hour (it will continue to cook while it rests off the heat, raising the internal temperature to the desired 205°F). When it reaches 205°F, you can pull the pork, chop it, or slice it as you wish and serve it immediately, with extra sauce and buns on the side if you like.
